
This is such a simple recipe, but its not easy to replicate without sous vide. With a Steam oven you can sous vide with ease, but instead of immersing the bag of food in water, you are immersing it in steam. If your steam oven doesn’t have a sous vide function, you aren’t missing out as this recipe can be cooked in any steam oven with the ability to steam at less than 100 celcius.
The miso and mirin really accetuate the sweetness of the corn. You can cook as many corn cobs as you can fit in a bag , just increase the butter/miso/mirin quantities.
METHOD
- Add all ingredients to vacuum bag and seal, or place in a food safe ziplock bag that is rated to 85C heat.
- Set oven to Steam or sous vide 85C for 45 minutes.
- Remove from bag and drizzle with liquid from bag and serve.
3-4 corn cobs, husks removed
40 gm butter
1 T miso paste
1 T mirin
