
This is an all purpose, easy to make butter cookie. These can be frozen at the log stage and pulled out to cook on demand.
Use this recipe as a base and add whatever you like to it. Chocolate chips, dried fruit, and flavourings can be added for a variety of results.
Try Almond Essence and Cherries, or Cranberries and Orange rind, or white and dark chocolate chips.
METHOD
- In a kitchen stand mixer, beat butter and sugar till light and creamy.
- Add flour 1 cup at a time beating between additions.
- Add vanilla and sweetened condensed milk and mix to combine.
- Roll dough into 6 large logs.
- Refrigerate logs until firm.
- Cut logs into cookies (each log will make approximately 12 cookies).
- Preheat oven using Fan Forced function to 160C and bake for 14 minutes.
- (Unused logs can be frozen and take approximately an hour to defrost).
