Steam Combi Recipe: Gluten Free Spiced Orange and Almond Cake

This recipe really benefits from using the sous vide function on your oven to cook the oranges. Traditionally for this sort of recipe we would boil the oranges for an hour or so but in doing so we lose a lot of the flavour of the oranges into the boiling water. Its also possible to infuse the spices into the orange with this method

METHOD

For the Sous Vide Oranges

1. Cut 1 orange into 6- 8 wedges
2. Cut the other orange into 2-3 mm slices
3. Place in Sous Vide Bag with spices salt and sugar
4. Seal and sous vide at 90C for 1 hour
5. Remove from bag and keep aside 3 of the slices
6. Puree all the rest in a food processor

For the cake
1. Grease and Line an 8 inch cake tin
2. Preheat oven to 165C Circulaire/Hot Air with medium steam
3. In a mixing bowl beat eggs till light and fluffy
4. Add sugar and beat a little longer
5. Mix in almond meal and orange puree.
6. Pour mixture into tin and place in oven.
7. After 30 minutes change function to Hot Air no steam.
8. Cook for a total of 50 minutes to 1 hour or until skewer comes out clean.
9. While Cake is in oven place all ingredients of syrup in small saucepan and cook until sugar is dissolved
10. Cut the retained orange slices into quarters and decorate top of cake with them.
11. Pour over syrup.
12. Top with sliced almonds and sprinkle with icing sugar if desired
13. Serve with cream, marscapone, or Greek yoghurt mixed with the rind of an orange.

Ingredients

Sous Vide Oranges
2 large Oranges
2-3 star anise
1 cinnamon stick
4-6 cloves
½ tspn salt
1 T raw sugar

Cake
6 eggs
250gms caster sugar
250gms almond meal


Spiced Orange Syrup
Juice of one orange + ¼ cup water.
1 cinnamon stick
3 cloves
1 star anise
1/3 cup caster sugar
¼ cup Sliced Almonds
Icing sugar to decorate.
