Steam Combi Recipe: Cherry Clafoutis

This is such a simple and adaptable dessert. If I had to compare the texture to any other dessert I would say it was similar to a very light bread and butter pudding, but so much quicker and easier to put together.
When making this one, the most tiresome part was stoning the cherries! You can swap cherries for any other fruit you desire, raspberries and blueberries would be wonderful, chopped or halved summer stone fruit works equally as well.
We used a hand blender food processor accessory to mix the batter ingredients – it saved even more time but you could beat it in a bowl just as easily.

METHOD

  1. Preheat oven to fan forced/Hot Air 170C  70% humidity (Steam combi level3 in Asko) 30 minutes cook time
  2. Put all the batter ingredients into a blender and blend until well mixed and fluffy
  3. Grease baking dish with butter
  4. Pour into buttered baking dish and drop in cherries evenly distributing them
  5. Bake 30 minutes or until golden brown on top and fluffy and risen.
  6. Serve immediately with cream or icecream if desired.

1 tspn vanilla essence
2 cups (approx) halved and stoned cherries
