Steam Combi Recipe: Steam Grilled Salmon with Crispy Potatoes and Cherry Tomatoes

Salmon is such a wonderful dish in the steam oven and so quick to cook. This recipe is a simple tasty and quick meal that can be prepared, cooked and on the table in less than half an hour. I use Fan assisted Grill with steam to create this dish, but if your oven doesnt allow steam with this function, choose fan bake and steam and place the dish near the top of the oven.
This recipe feeds 4 but you can easily increase or decrease the ingredients and all cooking times remain the same.

 

METHOD

  1. Mix wasabi, miso, lime juice, and sweet chilli sauce in a small bowl and coat meat side of salmon.
  2. Sprinkle with sesame seeds and set aside  while you prepare potatoes.
  3. Place a large  oven tray in the oven, second shelf from the top.
  4. Preheat oven to 210C  Fan Assisted+steam with 50% humidity (Fan Grill in Asko with 1 burst of Steam at the beginning of the cook)(Fan Assisted Grill+ Steam in a Smeg Steam Assist Oven)
  5. Peel potatoes and dice to 3cm cubes .
  6. Bring potatoes to boil in salted water and boil for 3 minutes.
  7. Drain potatoes and leave airing for a while to dry ou
  8. Toss in Olive Oil.
  9. Set oven for total cooking time of 22 minutes,
  10. When oven is up to temperature, add potatoes to one side of the tray  and cook for 10 minutes .
  11. Open oven and add a tablespoon of olive oil to the other side of the tray
  12.  Add salmon to tray , close door and continue cooking for another 7 minutes.
  13. When there is 5 minutes left on the timer, add the tomatoes to the oven.
  14. Remove all food from oven.
    Serve with salad or green vegetables.
