Microwave Combi Recipe: Blueberry Passionfruit Muffins

Using the Microwave Combination function in your oven allows you to have these light and delicious muffins in half the normal cooking time. Remember to use Silicon muffin tins when cooking this. The timing is perfect for 12 regular sized muffins at once. You may need to reduce or increase the cooking time if you use mini or texas sized tins.
Feel free to replace the berries and passionfruit used in this recipe with any other fruit you desire. Berries can be fresh or frozen. 
If you halve or increase the quantities of this recipe then the cooking time will need to be decreased or increased.

 

METHOD

  1. Preheat your oven to 200C
  2. In a medium sized bowl, whisk the eggs with the sugar, then add the milk, butter and yoghurt and vanilla essence and combine together.
  3. Add the dry ingredients to the wet, mixing only enough to combine them.
  4. Add berries and 3 T of the passionfruit syrup if using and just barely mix in
  5. Spray a 12 hole regular sized silicon muffin tin with non stick spray (or use 2 6 hole tins side by side) Divide the mixture evenly between the holes and top each with a little more passionfruit syrup if using.
  6. Set the preheated oven to 200C + 360w microwave (Or as close as your oven settings allow)
  7. Cook for 8-10 minutes or until golden and risen.
  8. Allow to cool in the tins for a few minutes before removing .

2 eggs (size 7)
1 c caster sugar
1/2 c milk
100g butter, melted
1/2 c greek yoghurt
1 t baking soda
1 t vanilla essence
2 c plain flour
1/2 t salt
2 t baking powder
1 c blueberries (fresh or frozen) or any other berry of your choice
1/4 c passionfruit syrup (optional)
