Steam Combi Recipe: Courgette, Feta and Spinach Slice

This is an easy and healthy dish for lunch made to perfection with Steam assist Cooking.

Instructions are for an ASKO oven using a 2 stage process but this can be cooked in any Steam Combination oven.

METHOD

  1. Whisk eggs and flour together until smooth
  2. Add all remaining ingredients. Stir until thoroughly combined.
  3. Pour into a baking lined brownie sized pan.
  4. Diced tomato or sliced courgette can be scattered on top – optional.
  5. Place into a cold oven, on the middle shelf
  6. Set up oven;
    Stage 1 – combi steam level 2 – 195 C – 40 Mins. 
    Stage 2 – Large Grill + Fan- 190 C – 8 Mins
  7. Once cooked, cool a little before slicing into portions.

6 large eggs
¾ c Self raising flour
500g courgettes, grated
I large spring onion, sliced
1 C spinach leaves, chopped
½ c herbs such as parsley, mint, chopped 
150 g feta, crumbled
½ c cheese, parmesan or tasty
Salt and pepper to taste
