
This is an easy and healthy dish for lunch made to perfection with Steam assist Cooking.
Instructions are for an ASKO oven using a 2 stage process but this can be cooked in any Steam Combination oven.
METHOD
- Whisk eggs and flour together until smooth
- Add all remaining ingredients. Stir until thoroughly combined.
- Pour into a baking lined brownie sized pan.
- Diced tomato or sliced courgette can be scattered on top – optional.
- Place into a cold oven, on the middle shelf
- Set up oven;
Stage 1 – combi steam level 2 – 195 C – 40 Mins.
Stage 2 – Large Grill + Fan- 190 C – 8 Mins - Once cooked, cool a little before slicing into portions.

¾ c Self raising flour
500g courgettes, grated
I large spring onion, sliced
1 C spinach leaves, chopped
½ c herbs such as parsley, mint, chopped
150 g feta, crumbled
½ c cheese, parmesan or tasty
Salt and pepper to taste
