Smeg Multitech Recipe: Curried Chicken Bake

The huge benefit of Smeg's Mulititech function, is the ability to combine Oven, Steam and Microwave in one function. This results in food thats fast but nutritious and delicious . You can have this bone in chicken curry thats loaded with vegetables  on the table in less than 30 minutes without the need to even preheat the oven.

 

METHOD

  1. Place cut vegetables and onion on the base of a large microwave safe casserole dish . 
  2. Rub each of the pieces of chicken with the curry paste, and place on top of the vegetables. Add  any left over paste into the dish 
  3. Sprinkle with salt and pepper and add soy, lime and sesame oil to casserole along with the  coconut cream 
  4. Set up a multi step cooking session as follows  
    Step one :MULTITECH-MULTITECH 240c/40% Humidity 20minutes/300 watts 
    Step two MOISTEN- GRILL+STEAM  240c  10 mins 1 BURST OF STEAM
  5. Place casserole on shelf 2 in cold oven.
  6. Load required water as requested by the oven.  
  7. Set a minute minder timer for 25 minutes to remind you to add green beans or peas after 25 minutes cooking has elapsed 
  8. When cooking is complete, top with a handful of coriander or other herbs. 
  9. Serve with rice .

2 cups vegetables chopped into 2cm dice (pumpkin, kumara, potato, capsicum all work well) 
1 large onion, cut into 2cm dice 
1.5 kg bone in skin on chicken pieces 
1/3 c yellow curry paste (or use curry paste of your choice 
½ t salt 
½ t pepper (ground) 
3T soy sauce 
3T lime juice 
1T sesame oil 
200ml coconut cream 
1 c whole green beans or peas  
Coriander or other herbs
