Smeg Multitech Recipe: 30 Minute Tomato and Feta Pasta

This recipe is a take on the Feta and Pasta recipe that went viral on social media, but its even easier with your Smeg Omnichef oven as we can use raw pasta, eliminating the need for extra time and pots.  This is a true all in one pot dish that is satisfying and delicious as well as fast and convenient.

 

METHOD

1.Place the dry pasta on the base of a casserole dish large enough to ensure the pasta is more or less in a single layer. 
2.Sprinkle salt pepper herbs and chilli flakes over pasta. 
3.Mix tomato paste with stock and pour over dry pasta 
4. Add capsicum  tinned and fresh tomatoes 
5. Cut feta into 3rds and place on top of tomato mixture 
6. Set oven to Multi Tech- MultiTech, 190C 70% humidity, 300 W 30 minutes and insert dish into centre of cold oven. 
7. When cooking time is up, remove from oven, break up and stir in feta and add parmesan and basil leaves. 
 
Other vegetables can be added or substituted for the capsicum such as eggplant, zucchini, onion etc ( or can be left out completely)   
If desired, stir through a few handfuls of baby spinach leaves at the end.

Ingredients

250g dry pasta (penne, rigatoni, fusilli or macaroni  
400 ml chicken or vegetable stock  
1/3 cup tomato paste 
1T dried italian herbs 
½ t salt 
1 t ground cracked black pepper 
½ t chilli flakes (optional) 
1 red capsicum, sliced 
1 can cherry tomatoes in juice 
1 punnet fresh cherry tomatoes, halved 
1 200 g block feta cheese 
½ c grated parmesan 
Large handful basil leaves and or baby spinach leaves.
