How to: Making your own Pasta with the SMEG Stand Mixer and Pasta Attachments

Once you get the hang of making your own fresh pasta and noodles using the Smeg pasta attachment, you’ll become hooked!

When you can have just the one machine with attachments such as those offered by Smeg, it means less gadgets to store in cupboards. 

The Smeg pasta attachment is great quality, heavy and robust and does all the work for you. No need to knead the dough as the rolling does this for you.  What's more you can make yourastadough first in the Smeg mixer itself.

 

TIPS WHEN USING YOUR SMEG PASTA ATTACHMENTS

  • Try to make your pasta with Italian OO flour if you can 
  • Dough should not be too tacky . It is easier to roll if it is a little bit on the drier side.
  • After making your dough, rest it for at least 20 minutes in the refrigerator
  • Flour bench generously top with fine semolina or flour and divide dough 
  • If your new to making pasta keep pieces smaller around 100gms at a time, or less until you’ve mastered the process.
  • Attach pasta roller attachment to front of machine and set to 0, always start on 0  
  • Turn machine on to speed level 1, it can stay turned on 1 for the entire rolling process 
  • Take a piece of your dough and flatten it using the flour or semolina, you want it to comfortably roll through otherwise it will tear, all will not be lost as you can regather dough and repeat though 
  • Put through 0 two to three times folding like an envelope after each roll.  This process takes away the need to knead your dough and results in silky smooth texture.
  • Lay on floured bench top and continue rolling remaining dough 
  • Change size to 1, reroll and then move through levels 2,3 4 and 5. Dont jump levels.We find 5 is good for most noodle and spaghetti dishes, and 6 for fettucine, pappardelle and lasagne sheets but you can decide your preference  
  • To cut your dough into spaghetti, replace roller with desired attachment.
  • Turn machine back on to speed 1 and cut each piece into strips, lay on bench or hang if not cooking immediately. 
  • Never get water near your pasta attachments, use the little brush provided to get in corners. Next time you use your attachments take a small piece of dough and run through to collect any stuck bits from previous. 
  • Use damp clean cloth to wipe over your machine.  
  • Before you know it you will be hooked, and will be making fresh pasta and noodles regularly
