
This is a very simple and exceptionally delicious recipe that makes a great side dish or even on its own as a snack.
If you dont own a steam combination oven, boil the potatoes for 8-10 minutes then toss in the seasoning and roast.
METHOD
- Mix all ingredients except potatoes in a large bowl or small roasting dish and toss chopped potatoes, making sure they are all coated all over.
- Set oven to Steam 100C 20 minutes and steam potatoes.
- Then set oven to your favourite roasting function (Circo Roasting/Hot Air Grilling/Turbo) depending on your oven 220C and roast for 20 further minutes, or until potatoes are tender and well browned.
- Toss a couple of times during the cooking process.
- If desired serve with chopped fresh coriander leaves and or thyme.

500g roasting potatoes such as Agria or Vivaldi, chopped into 4cm chunks , peeled or unpeeled both work well.
3 T olive oil
2T lemon juice
2 tspn runny honey
1-2 T cumin seeds
2t tumeric
1 t smoked paprika
1 T black mustard seeds
1 t garam masala
salt
