Recipe: Duck Fat Hassleback Potatoes

These potatoes are so delicious and moreish. They are NOT in any way diet food but the double fat content is what gives them that delicious crusty texture and flavour

METHOD

  1. Make numerous vertical slices, approximately 2-3mm apart through the potato not quite all the way through (If you place a chopstick either side of the potato while cutting, they will form a barrier so you don’t cut through the potato too far) 
  2. Toss the potatoes in the olive oil and sprinkle generously with salt and with semolina if using (This adds extra crispiness) 
  3. Spread duck fat across the cut side of each potato and put more in the oven tray. 
  4. Preheat oven to 200C and roast potatoes for 45 minutes –1hour or until golden brown and crispy. 
  5. toss potatoes and brush with more Duck fat from the pan half way through the cooking process.

1kg agria potatoes (or more as desired) peeled  
Olive Oil
¼ c semolina (optional) 
100g Duck Fat  
Sea Salt Flakes
