
These make a great addition to a Home made Christmas gift bag.
METHOD
- Place the butter and sugar in the bowl of an electric mixer and beat for 5 minutes, until pale and creamy. Scraping down the sides of the bowl
to ensure even mixing. - Add the molasses, vanilla, baking soda, together
- Add ginger, mixed spice and flour
- Beat until the mixture just comes together to form a smooth dough.
- Roll out the dough between 2 pieces of non-stick baking paper to 3mm thick.
- Use cookie cutters to cut into desired shape, re rolling excess dough as required.
- Refrigerate for 20 - 30mins to firm up the dough before cooking
- Preheat oven to 160°C. Fan Forced
- Bake for10-12 minutes or until the cookies are just firm to the touch.
- Transfer to a wire rack to cool completely.
- Ice and decorate as desired
Makes approx. 30 cookies.

90 g / ½ c brown sugar
250g / ⅔ c Molasses
1 tsp Vanilla extract

375g / 2½ c All purpose flour, sifted
Icing sugar to Dust when cooled or decorations and icing as desired
