Recipe: Parmesan Crusted Asparagus

This is a great way to serve asparagus and make it even more special. You can choose to cook this dish on the cooktop or in the oven

This recipe makes 4 generous servings 

METHOD

  1. Place beaten egg in a bowl. 
  2. In a separate bowl, combine breadcrumbs, parmesan, pepper, garlic salt. 
  3. Dip trimmed asparagus into beaten egg, then dip straight into crumb mixture,pressing crumb onto asparagus. 
  4. Refrigerate, if cooking later. 
  5. If shallow frying, heat about 1 cm of olive oil over medium heat, add crumbed asparagus and cook for 2-3 minutes each side until asparagus is tender and crumb is golden brown.
  6. Drain on paper towel. 
  7. Serve immediately. 
  8. If oven baking, pre heat oven to 210 degrees C fan-forced/hot air function. 
  9. Arrange crumbed asparagus on lightly greased baking tray, in a single layer ,ensuring they are not touching one another. 
  10. Spray lightly with olive oil. 
  11. Bake until asparagus is tender and crumb is golden brown. 
  12. Cooking time will depend on thickness of asparagus. 
  13. Serve immediately.

1 C panko breadcrumbs 
2 eggs, lightly beaten 
1 C finely grated parmesan cheese 
2 bunches asparagus spears, washed, wooden stems removed, medium thickness 
1/2 t garlic  
salt 
black pepper, freshly ground, to taste 
olive oil  spray
