
This is a great way to serve asparagus and make it even more special. You can choose to cook this dish on the cooktop or in the oven
This recipe makes 4 generous servings
METHOD
- Place beaten egg in a bowl.
- In a separate bowl, combine breadcrumbs, parmesan, pepper, garlic salt.
- Dip trimmed asparagus into beaten egg, then dip straight into crumb mixture,pressing crumb onto asparagus.
- Refrigerate, if cooking later.
- If shallow frying, heat about 1 cm of olive oil over medium heat, add crumbed asparagus and cook for 2-3 minutes each side until asparagus is tender and crumb is golden brown.
- Drain on paper towel.
- Serve immediately.
- If oven baking, pre heat oven to 210 degrees C fan-forced/hot air function.
- Arrange crumbed asparagus on lightly greased baking tray, in a single layer ,ensuring they are not touching one another.
- Spray lightly with olive oil.
- Bake until asparagus is tender and crumb is golden brown.
- Cooking time will depend on thickness of asparagus.
- Serve immediately.

2 bunches asparagus spears, washed, wooden stems removed, medium thickness
1/2 t garlic
salt
black pepper, freshly ground, to taste
olive oil spray
