
These tasty snacks are so easy to make and much healthier than the sugar filled options available on the supermarket shelves. You can omit the sugar in this recipe, or replace with an alternative sweetener or adjust amount for personal taste.
METHOD
- Puree berries, sugar and juice until smooth. Transfer puree to saucepan.
- Bring to the boil, then simmer stirring occasionally until reduced by approx. a quarter The goal is to reduce the majority of liquid.
- Push reduced berries through a sieve to remove the majority of seeds. This step is optional.
- Grease baking paper lightly with non-stick baking spray. Pour berry mixture onto greased paper and spread thinly and evenly until the entire tray is almost covered into a rectangular shape.
- Place in to oven – 100 degrees C – hot air/fanforced – 2 ¾ hours. When ready the fruit leather should be dry but slightly sticky.
- Remove from oven. Roll together with the baking paper into a long spiral. Transfer to a chopping board and with a sharp knife cut into approx. 4 cm wide pieces.
- Store in airtight container.
