Smeg Delta T Recipe: Harrissa Salmon with Delta T

Using the Delta T function in your Smeg Galileo oven means you will always get a perfect result. This excellent tool, in conjunction with the core temperature probe takes all the guess work away from acheiving restaurant quality meals.
We have used asparagus in this recipe but this will work equally well with green beans, halved baby pak choy or thin broccolini. 
You could also swap out the harrissa and dukkah for pesto and herbs or any other sauce and topping you desire.

METHOD

  1. Prepare your salmon by spreading the top with harissa paste and sprinkle the dukkah over the salmon
  2. Remove any woody ends from the asparagus
  3. Place the fish  in a dish in the oven with the asparagus spears 
  4. With a cold oven, insert the probe horizontally into the centre of the fish making sure it reaches the centre of the thickest part of the fillet, and insert the other end into the oven.
  5. Set the oven as follows 
  6. Choose Moisten, 3 bursts- dont worry about setting a time or a temperature .
  7. Press the probe icon and set the core temperature to 55. click the delta T icon at the bottom of the screen and choose Fast
  8. Press start and add any water as required by the oven.
  9. The oven will automatically select and adjust the temperature throughout the cooking process and will stop when the fish reaches the selected core temperature.

Ingredients

4 thick Salmon Fillets, or one large piece or a side, boned and skin removed 
4-6T Harrissa paste of your choice. 
4-6T Dukkah of your choice 
2 bunches asparagus, medium thickness, green beans, or thin broccolini
