Microwave Combi Recipe: Chilli and Miso Roasted Chicken in Under 25 Minutes

This is a great, cost-effective recipe for when you need a meal in a hurry. With your Microwave Combination oven you are speeding up the cooking time with the addition of microwave to the regular oven cooking function.

Accompanying sides can be cooked at the same time in your main oven or on the cooktop e.g. steamed rice or roasted mini potatoes or cauliflower puree.

METHOD

  1. Preheat oven - Hot Air Grilling OR Fan assisted Grill + microwave 200C  360- 400W  depending on your Microwave combi.  25 minutes for a 1.3kg chicken. (or if your oven comes with a temperature probe, set the core temperature to 76C
  2. Place butterflied chicken on microwave oven safe dish or glass tray.
  3. Mix all marinade ingredients together in a bowl and using disposable gloves, rub/spoon marinade over entire butterflied chicken.
  4. Once cooked, check that juices run clear, to ensure it is cooked,  let the chicken rest for a few minutes, before serving.

1 x butterflied free range chicken- approx. 1.2 - 1.3 kg

Marinade -

2 T miso paste, white
2 T sesame oil
1/4 C sweet chilli sauce
2 tsp grated ginger
1 tsp crushed garlic
3 T shaoxing wine
2 T soy sauce
