Recipe: Orange and Date Muffins

The flavours of orange and date work so well together. This is a very quick to make recipe, and using your Smeg Food processor attachment for your hand blender makes it even faster and easier

METHOD

  1. Preheat oven to 180 degrees fan assisted
  2.  Spray muffin tins with baking spray or line with muffin liners 
  3. Set up processor and process oranges and dates till well combined
  4. Add egg process for 30 seconds, then add butter and sugar and process until well combined.  
  5. Add dry ingredients and process until JUST combined using pulse button. Do not over process 
  6. Divide mixture into muffin tins sprinkle with cinnamon and sugar, bake for 13-16 minutes or until risen and golden

½ c dates chopped 

1 egg 

125 melted and cooled butter 

¾ c white sugar 

1 ½ c plain flour 

1tsp baking powder 

1tsp baking soda 

Pinch of salt
