
This is an easy recipe for a fast focaccia style bread that is cooked with steam in an oven proof skillet ( I used cast iron). You can even fill this with your choice of fillings for a great filled foccacia or calzone style bread.
If you want to speed up the process even more you can heat the skillet on a cooktop and then add it filled to the hot oven.
METHOD
- Place all ingredients except the Olives and Rosemary in the bowl of a stand mixer and knead for 6-8 minutes or until smooth and elastic.
- Place in a warm place or use your ovens proving function and leave to rise for 30- 45 minutes or until doubled in size.
- Remove dough from bowl and press into circular shape the size of the skillet base ( If you do this on baking paper you can easily flip it into the hot skillet when it is ready) .
- Preheat oven with skillet inside to 220c with steam assist high humidity and leave the skillet in a further 5 or 10 minutes.
- Drizzle hot skillet with olive oil and quickly place dough into the base .
- Press fingers into dough and stud with olives and or rosemary if desired.
- Drizzle over a little more oil
- Cook for 15 minutes or until golden and crispy
