
These morish little toasts are normally deep-fried till golden brown and crisp. Your oven's Airfry function also gives impressive results, on fact you may never deep fry these little beauties again!
Get your Smeg processor out for this recipe, it makes quick work pulling everything together. Make these as part of your yum char meal or to have with drinks. If I’m making to have with drinks, I cut my square into 4 for easier eating/dipping. Make ahead of time and refrigerate until ready to cook
Make sure your bread is reasonably stale, lay on bench to ‘dry’ a little if its fresh.
If your oven doesnt have an airfry function then fan forced plus grill or just fan forced will give a similar result but may take a bit longer
METHOD
- Take the prawns, garlic, ginger, spring onions, sugar, egg white, sesame oil and place in bowl of processor. Process till you have a thick paste. Set aside while you prepare bread
- Break up egg yolk with 1 tsp of water
- Take crusts of bread and spray generously with baking spray, flip over onto board
- Divide prawn mixture onto each unsprayed slice of bread and spread gently to edges.
- Brush with egg yolk
- Mix panko or breadcrumbs with sesame seeds, flip prawns toasts onto mix press gently to get a good coating
- Place back on board and cut into two (or 4- triangles are easy to pick up) transfer to your well sprayed air fry rack, then generously spray tops of toast.
- Pop in fridge if not cooking immediately.
- Heat Smeg oven using air fry function to 250c once heated pop in toasts on level 4 for 12 minutes or until golden
Heat Bosch oven using air fry function to 210c, once heated pop toasts on level 4 for 8 minutes or until golden
500gm defrosted cleaned prawns
2 garlic cloves
Thumb of ginger grated
2-3 spring onions depending on size chopped
1 tsp sugar
1 egg separated
1tsp sesame oil
8 slices of stale thin sandwich bread with crust removed
About 1 cup of panko or regular breadcrumbs
2tbps sesame seeds
Baking spray
Your favorite chili sauce to serve
