
When life gives you lots of lemons - make Limoncello.
With the aid of the sous vide function in your steam oven, you can have limoncello ready to drink in just a few hours instead of the typical wait of weeks for the peel to infuse into the alcohol
METHOD
- Wash and carefully peel the lemons taking only the yellow peel and leaving the pith. (You can save the lemons and use the juice to make cordial or freeze for later use.
- In a sous vide proof ziplock bag or a clean glass jar , place the rind with the vodka.
- Set your oven to Sous vide and set oven to 58C .
- Cook for 2 hours.
- While the lemon rind is in the oven, prepare the sugar syrup
- Add the sugar and water to a saucepan and bring to a gentle boil until all the sugar is dissolved.
- Cool
- Remove rind from liquid and add to sugar syrup
- Sterilise jars or bottles in your steam oven at 100C for 15 minutes then fill jars with limoncello and refrigerate
