
These easy to make bites are very moreish . The recipe for the dough is also quite adaptable. You can make them bite size or larger into small rolls. It is the short boil in baking soda laced water that gives them the darker crust and chewy texture so dont skip that part.
METHOD
- Add flour, salt, instant yeast, butter and milk to the bowl of a stand mixer, and knead for approximately 6-7 minutes.
- Put the dough into an oiled bowl in the proving function of your oven at 40C for 45 minutes to an hour, or until doubled in size.
- Divide the dough into 4 portions and roll into fat logs, cutting each log into 6-8 pieces depending on the size of bites you desire.
- Cut the cheddar into cubes of approximately 0.5cm .
- Press out one of the pieces of dough and place a piece of the cheese in the centre.
- Bring up the edges to encase the cheese and roll into a large marble size ball.
- Rest the balls while you repeat with the rest of the dough.
- Add 1/4 cup baking soda to a saucepan of boiling water.
- Add 8 of the dough balls to the boiling water and leave for 2-3 minutes.
- Using a slotted spoon, remove the balls from the water and drain on a board.
- Preheat oven to Humidify ->220c Fan Assisted >with 1 burst of steam
- If you wish to top each ball with sesame seeds or salt, brush the top of each ball with egg wash and sprinkle with topping of your choice. You do not have to top with anything if you do not wish to, in which case you can omit the egg wash
- Place balls on baking paper lined tray and cook for 15 minutes or until dark golden brown.
