Steam Combi Recipe: Mini Apple Pastries

These are a great little snack and a good way to make use of apples that might just be past their best.  The pastry recipe is an easy one but you could use prepurchased pastry too, either shortcrust or puff will work for these little delights.

METHOD

Pastry

  1. Add flour, sugar, salt, butter and egg to the bowl of a food processor and pulse till combined to a large crumb consistency.
  2. While processing, add water a tablespoon at a time until the dough just starts to come together in chunks. Do not over process.
  3. Turn out pastry onto board and bring together , pressing out into a disc. 
  4. Cover with plastic wrap and refrigerate for half an hour 

Apple Filling

  1. Peel and chop apples into 1cm chunks. 
  2. Place in steam proof tray with sugar, lemon peel and raisins and spice.
  3. Steam aat 100C for 6 minutes then cool.

Assemble and cook

  1. Preaheat oven to 190C fan forced with low humidity. (25%)
  2. Roll out pastry to 3mm thick and cut into circles with a 10cm cookie cutter or similar
  3. Place a tablespoon of apple mixture in the centre of the circle and fold over, crimping the edge well to seal in the fruit 
  4. Brush with egg wash and sprinkle with raw sugar (optional)
  5. Bake for 20 minutes or until golden brown.

250g flour
1/4 c caster sugar
1/2 t salt
125g cold butter cut into cubes
1 egg (size 7)
2-4 T cold water

2 granny smith apples
3T caster sugar
Grated rind of a lemon
1/4 c raisins (or any other dried fruit desired)
1t mixed spice
1 egg for egg wash
