
These pastries are very easy and delicious and you can whip them up in less than half an hour. Make use of pre rolled pastry sheets for a very quick snack. The cheeses can also be swapped out for whatever you have on hand. If you dont have ricotta, you can use cream cheese or any other spreadable cheese, cheddar can be swapped for any tasty cheese.
METHOD
- Cut any woody stems from asparagus
- Steam asaparagus for 3 minutes to blanch. Cut each stem in half.
- Preheat oven to 210C Fan Assisted with 30% Steam
- Cut each pastry sheet into 4 squares .
- Turn the pastry square so it is a diamond shape and spread a heaped tablespoon of ricotta from the top corner to the bottom corner
- Sprinkle with herbs and lemon pepper
- Sprinkle a large tablespoon of cheddar and parmesan mixed
- Place 2 -4 pieces of asparagus on top of the cheese.
- Fold the pointed corners to the centre to enclose the filling
- Brush pastry with egg wash
- Sprinkle with a little more cheese
- Place on baking paper lined tray
- Bake for 15 minutes or until pastry is puffed and golden
8 Stems Asparagus ( or more if you want more asparagus per pastry
2 sheets prerolled puff pastry
1 cup Ricotta cheese
2 T Mixed dried italian herbs
2 T lemon pepper
1 C grated cheddar cheese
1/2 c grated parmesan cheese
1 egg for egg wash
