
These are very adaptable and a great thing to make for your friends who are on a Gluten Free diet. You can make them with regular flour as well though if you prefer.
You can use any fruit or berries that you choose but cut larger fruit into small pieces as heavier pieces have a tendency to sink.
METHOD
- Preheat oven to Fan forced/hot air 160c and with a low level of added steam .
- Spray a 12 friand or muffin tray with baking spray.
- Beat egg whites until they are light and fluffy but not dry.
- Sift together all the dry ingredients into a bowl,
- Add egg whites and mix
- Add melted butter and vanilla extract mixing well to combine.
- Place aabout ¼ cup of the mixture in each muffin or Friand tin and top with fruit.
- Bake for about 25-30 minutes until golden on edges and firm to touch.
- Leave to rest for 5 minutes before turning out to cool completely.
- Enjoy with cream or yogurt or maybe a fruit compote on the side for a simple dessert
