
This is an extremely easy and fast loaf of bread which you can make in under 2 hours. It uses just the most basic ingredients of flour, yeast salt and water.
It makes a very light and fluffy loaf so let it cool well before cutting.
I use a kitchen mixer with a dough hook for the kneading but you can do it by hand too if you need to.
Its really best to weigh everything, including the water for this loaf .
METHOD
- Put all ingredients into the mixer bowl and use the dough hook to knead the dough for 6-8 minutes or until smooth and elastic.
- Place in greased bowl and leave to rise in a warm place (if your oven has a dough proving function use that) for 45 minutes or until doubled in size.
- Turn dough out of bowl onto lightly floured surface and flatten into rectangle.
- Fold in each side and then fold front edge to middle and then back edge over front to form a log shape.
- Pull log toward you to tighten the top surface of the “log” and place inside baking paper lined loaf tin.
- Leave to rise a further 30 – 40 minutes until risen .
- If you have a steam assist oven , set it to 190C Fan+ steam low humidity.
- If you don’t have a steam oven, set a baking tray of water on the bottom shelf of the oven and set to 190 Fan Bake.
- When oven is heated bake loaf for 30 -35 minutes or until golden brown and loaf sounds hollow when tapped on the bottom.
- Remove from tin and leave to cool before slicing.
