
This recipe uses our “All purpose enriched rolls” recipe as a base and it makes 10-12 delicious buns.
METHOD
- Add all the ingredients up to and including the 80gm water to a mixer and knead on low-speed with a dough hook for approximately 8 minutes or until the dough is smooth and elastic.
- Add the dried fruit and continue to knead until it is mixed well in.
- Place dough in greased bowl and cover and leave to rise in a warm place ( if your oven has a dough proving function use this) for 1 hour or until doubled in size.
- Remove dough from bowl and knock back and divide into equal sized pieces and form balls rolling well between the board and the palm of your hand to form a smooth surfaced ball.
- Place on baking paper lined oven tray, and lightly cover and leave to rise for a further 45 minutes or until puffed and well risen.
- In a small bowl mix the flour and water into a soft dough, knead by hand and roll out.
- Cut strips from the dough to make crosses for the buns.
- Brush each bun with water and place the strips of dough on each bun to form a cross.
- Preheat oven to 180C Fan forced or Fan assisted ( with added steam if available – low humidity)
- Cook buns for 30 minutes or until golden brown.
- Mix sugar and water in small pan until sugar is dissolved.
- When you remove the buns from the oven, immediately brush well with the sugar syrup.

370gm strong or high grade flour
40gm soft butter
1 egg
20 gm sugar
7gm instant yeast
7gm salt
1 tspn mixed spice
135gm(about half a cup) milk
80 gm water
1/2 – 3/4 cup dried fruit
1/4 c flour and water to mix for crosses
3 T sugar and 6 T water for syrup
