Steam Combi Recipe: Blueberry Lattice Pastries

People are often amazed how the addition of Steam gives such an improved result with pastry. Crisp and puffy, these little desserts are so easy to make. Keep some frozen berries and pastry sheets in your freezer and you can have a super dessert in less than half an hour .

METHOD

  1. Prepare pastry by marking each half sheet into thirds across the width of the piece.
  2. Make cuts one centimetre apart diagonally downward from the inside mark toward the outside of the pastry on both sides .
  3. Sprinkle 2 Tbs Almond meal on the middle uncut portion of the pastry leaving 1cm top and bottom clear, and top with a portion of the blueberries , then drizzle a tablespoon of sweetened condensed milk on top of berries.
  4. Create lattice by folding first one strip from the left followed by one strip from the right over the berries, overlapping each other and repeat for the remaining cut strips .
  5. Seal ends together to contain fruit .
  6. Brush with beaten egg and sprinkle with raw sugar
  7. Repeat for remaining pastries.
  8. Cook in Steam combination oven set to  Top and Bottom Heat or Bottom and Fan Forced, + Medium steam (50%)  220C for  18-20 minutes. Place in the bottom half of the oven.
  9. Any other thinly sliced fruit can be substituted for berries and chopped or grated chocolate can be added with the fruit for a more decadent result!

8 tablespoons sweetened condensed milk
1 egg
¼ cup raw sugar
