
These are quick tasty snack or pass around at your next party or part of an Asian Banquet try this recipe and add to your repertoire. The airfry function in your oven means you can cook a bigger volume really quickly.
METHOD
- Pre heat oven on air fry function to 250c (Smeg) 230c (Bosch)
- Mix coconut and Panko crumbs in shallow bowl
- Whisk egg whites, sriracha, salt and pepper together in shallow bowl
- Place flour in third shallow bowl
- Spray air fry tray/basket with cooking spray
- Toss prawns in flour, shake off excess and then dip into egg mixture. Lastly place in crumb mix pressing to make sure crumb mix sticks to prawn.
- Place crumbed prawns onto prepared tray and continue to crumb remaining prawns
- Put a piece of baking paper on rack below to catch excess drips, place prepared prawns on level 3 and cook for approximately 7-8 minutes or until cooked through and crisp. Watch as coconut has a high burn point!
- Serve with lemon/lime wedges and sauce of choice
500gms jumbo prawns defrosted rinsed and dried on paper towels
1c thread coconut
1c panko breadcrumbs
2-3 egg whites depending on egg size (I used 2 size 7 egg whites)
Pinch of salt and pepper
2tbsps Sriracha – or use your favorite hot sauce
4tbs plain flour
Lemons/Limes or your favorite hot sauce to serve
