
This loaf is really easy to make – its a dump and knead style loaf. Its so delicious that you might find you need to double the quantity and make 2 loaves!
I used a cake fruit mix but you can use just raisins or sultanas if you like
METHOD
- Add all ingredients except second measure of sugar and water, to a stand mixer bowl ( or a large bowl if you dont have a stand mixer) and knead for 7-8 minutes .
- Transfer to an oiled bowl and leave to rise in a warm place( use the dough proving function of your oven if you have one) for an hour or until doubled in size.
- Line a loaf tin with baking paper .
- Knock Back dough and press out into rectangle shape- fold in edges and sides to form a log shape and place into lined loaf tin .
- Leave to rise again for another 30 -40 minutes .
- If using oven to rise dough, remove from oven 5 minutes early and preheat oven to 190 CFan Forced with low humidity .
- Cook for 30-35 minutes or until golden brown on top.
- While bread is cooking place sugar and water in a small saucepan and bring to boil , return to simmer until sugar is dissolved.
- When bread is cooked, remove from oven, remove from pan and brush bread with sugar glaze.
- Leave to cool before slicing.

400g high grade flour
10gm active yeast
2 T brown sugar
1 T cinnamon
1 T mixed spice
10g salt
20gm softened butter
135gm milk
135g water
1 – 1.5 c dried fruit of your choice
For glaze:
3 T sugar with 5T water
