Steam Combi Recipe: Greek Inspired Prawn Feta and Fish Bake

This dish is so easy and quick to make. You can make it with just prawns if you have no fish handy. The type of fish you use too, is up to you.  You can use fresh or tinned tomatoes or a combination of both (which I think gives the best result) 4 minutes preparation and 15 minutes to cook and you have a tasty, healthy meal. Serve it with crusty bread, or rice and a salad if you wish but its nice just on its own too.  Serves 4

METHOD

  1. Preheat oven using Fan Assisted Grill 220C (and add steam if available in  your oven)
  2. In a shallow baking tray or casserole dish, tip the can of tomatoes and the chopped fresh tomatoes.
  3. Sprinkle with the alepo pepper, lemon pepper ,garlic and oregano .
  4. Add the prawns and fish and toss to coat in the tomato mixture
  5. Squeeze the lemon juice over the seafood 
  6. Add the olives and break the feta cheese up over the top of the dish . Add lemon slices .
  7. Place in oven above the middle of the oven but not too close to the grill 
  8. Cook for 15 minutes or until fish is cooked and flakes when pulled, and cheese has lightly browned on the edges
  9. Sprinkle with parsley and serve.

Ingredients

500 gms of raw prawns, shelled 

600gms firm fish of your choice, cut into large chunks

1 can chopped tomatoes in juice

a handful of cherry tomatoes, halved or 1-2 larger tomatoes chopped

2tsp aleppo pepper or other pepper flakes

1tspn lemon pepper

2 cloves garlic, crushed

2T dried oregano 

Juice of one lemon + one extra lemon , sliced 

Handful of olives (any variety), stones removed

125gms feta cheese

Parsley, chopped
