Airfry Function Recipe: Handmade Poppadoms

Using your Smeg pasta machine and air fry basket make them an easy impressive snack or side dish. If you use cumin seeds, make sure they are ground well so as not to rip poppadom when putting through pasta machine.  This recipe makes 10-12 f, but you could make them small and use with a dip or as vehicle for a delicious Indian snack!  

The cooking instructions here work well for premade, purchased poppadoms too.

METHOD

  1. Place flour, salt, soda, and cumin if using in bowl mixing well to combine. 
  2. dd water and mix well to a firm consistency. 
  3. tip onto bench knead for a minute or two to bring dough together.
  4. Using a rolling pin pound the dough flipping and folding sprinkling with flour when needed for around ten minutes. This  is quite a satisfying although strange method but tried and true and works to develop the dough 
  5. Divide into 10-12 and roll each ball into a  large marble shape.
  6. Set aside while you assemble your mixer with the pasta  roller attachment. 
  7. Take one ball at a time and roll in a little urad flour, dust off and flatten, start rolling through machine on 0 slowly increasing to number 5 lightly dusting with extra flour to stop sticking. If you keep turning poppadom, you will get a reasonable round shape. 
  8. Place on baking paper and continue rolling the remaining poppadoms. 
  9. Select air fry function on your oven and heat to 200c  
  10. Take a poppadom and brush with neutral oil on both sides.
  11. Place on air fry tray – you should fit around 3-4 depending on how big you have made them. Make sure they are lying flat for an even cook. 
  12. Set timer for 5 minutes and bake. 
  13. Check after 5 minutes, they may need another minute but beware they turn quickly and will keep crisping as they cool. 
  14. If you don’t have an air fry basket, you can  shallow fry in medium/hot oil one at a time watching as they puff quickly, turn to get even color.
  15. Drain on paper towels.  
  16. Either method of cooking gives a brilliant result oven fry a crisper poppadom and fried a light puffed result.

Ingredients

1 c Urad flour (made from lentils)– available from Indian supermarkets 

½ tsp salt 

1 tsp bicarbonate soda 

1 tsp toasted freshly ground cumin seeds - optional 

¼ c of water – approximately 

Neutral oil for brushing or shallow frying
