Steam Combi Recipe: Individual Sticky Date Puddings with Easy Caramel Sauce

This easy to make pudding can be cooked in a variety of ways. If you own a steam oven you can choose to steam it (100C), or add steam to a hot air function, or if you dont own a steam oven you can cook it in a regular oven.
There is a difference to the texture of the finished result depending on the cooking method you choose, but it its delicious cooked any way!!
This recipe makes 4 puddings cooked in ramekins .

If cooking using Steam Combination, preheat  the oven to Hot Air + Steam ( 50%) 160C
If choosing to steam you will set the oven to 100c Steam

 

METHOD:

Make the puddings.

  1. Chop dates and place in bowl with baking soda, and add  boiling water.
  2. Add butter and stir till melted. Add sugar and stir till combined.
  3. Add the beaten egg, then the remaining ingredients and stir.
  4. Pour the mixture into 4 greased ramekins.
  5. Place in the oven and cook for 20 minutes if using Steam combi, or 35 minutes if steaming, or until risen and puddings spring back when pressed.
  6. If you choose to use steam only place a sheet of baking paper on a rack above the puddings to avoid condensation dripping onto the puddings.
  7. Turn out each pudding onto a plate and top with caramel sauce.

To make Caramel Sauce:
Melt the sugar, cream and butter together in a pan and simmer for 5 minutes.

This sauce can be refrigerated but will thicken, and reheat to melt, if necessary.

Ingredients

PUDDINGS:
1/2 C pitted dates
1 tsp baking soda
150ml boiling water
25g butter, softened
1/2 C caster sugar
1 egg, lightly beaten
1 tsp vanilla
3/ 4C flour
1 tsp baking powder

CARAMEL SAUCE:
 1C brown sugar
1/2 C cream
50g butter
