Steam Combi Recipe: Japanese Style Baked Rice

This dish is so easy to prepare, by the time your oven has heated up it is ready to go into the oven.  Its great as a side dish but you can add chicken or prawns to make a meal in one pan.

METHOD

 

  • Preheat Steam combi oven to 230c Hot Air with high humidity 
  • Drain Hijake or wakame and rinse in cold water, drain again shaking to get most of the moisture out
  • Take a large bowl and place hijiki, rice, vinegar, salt, sugar, sesame oil and mix well
  • Add endamame and mix in. If adding a protein, add it now 
  • Take a shallow baking dish approximately 20x26cm and oil well. 
  • Press rice into dish firmly and evenly
  • Place dish in centre of oven and bake for 20 minutes or until rice starts to crispen and top starts to turn golden
  • Remove from oven, top with mayonnaise, hot sauce and sprinkle with Furikake sprinkles

Ingredients

6gm dried hijiki or wakame (dried seaweed- available in most asian food stores, rehydrated in hot water
450gm cooked white rice ( any type of rice will work but short grain rice gives an excellent result
1T rice wine vinegar
1T sesame oil
1t sugar
1t salt
100g shelled endamame beans (most supermarkets have these frozen)
2 diced boned and skinned chicken thighs or 1c diced defrosted prawns (Optional)
neutral oil to grease dish
Mayonnaise(Kewpie works well as its easier to squeeze on to the finished dish)
Siracha chilli sauce 
Furikake (Japanese rice seasoning - available at most asian food stores)
