Steam Combi Recipe: Kumara Gnocchi in a Tomato Bacon Sauce

Making Gnocchi in a Steam oven makes it all so easy. However if you dont have a Steam oven you can still make this recipe. Just bake (preferable) or boil the Kumara first (drain it really well)  and cook the Gnocchi itself in lots of boiling salted water for a few minutes or until the gnocchi rises to the top of the water.

 

METHOD

  1. Set the oven to Steam, 100c.
  2. Place Kumara on perforated tray and steam until Kumara is soft. (approx 17 minutes from the time the oven gets up to temp.
  3. Remove from oven and mash Kumara in large bowl ,making sure you remove all lumps, or even better  use a potato ricer.
  4. Add Ricotta, Parmesan, Egg Salt Pepper and Nutmeg, then add 1/2 cup of the flour.
  5. Mix together and add more flour until you get a soft dough consistency.
  6. Empty bowl onto board sprinkled with flour and knead lightly for a minute or so till smooth.
  7. Roll dough into a long narrow log ( approximately 3cm diameter)
  8. Using a knife cut the log into pieces approx 2-3 cm wide.
  9. Toss lightly in the flour on the board and roll against a gnocchi board or side of a fork if desired.
  10. Line perforated tray with baking paper and place gnocchi in a single layer on the tray.
  11. Set Steam oven to  Steam 100C cook for 8 minutes after the oven has come to temp.

To make Sauce:

  1. In a large frying pan fry off bacon.
  2. Add onion, garlic and chilli and cook on a fairly low temperature until soft but not browned.
  3. Add tomatoes and Tomato paste and cook on medium heat until sauce starts to reduce slightly .

To Serve:

  1. Toss cooked Gnocchi in sauce to coat and then pile on plate.
  2. Top with crumbled feta, grated parmesan and chopped basil leaves.
  3. ENJOY!

Ingredients

For the Gnocchi

500 gms Kumara peeled and chopped into 3cm cubes
1/2 cup Ricotta
1/4 cup Parmesan Cheese, grated + more for serving
1 egg
1-1.5 cups strong flour (Highgrade or 00)
Salt
Cracked Black Pepper
Pinch of Grated Nutmeg.

For the Sauce:

4-5 rashers of bacon finely sliced.
1 small onion finely diced
3 cloves of garlic crushed
1 large red chilli deseeded and finely diced
1 can chopped tomatoes in juice
3T tomato paste

For Serving:
100gms feta cheese crumbled
1/3 cup grated parmesan
Basil or parsley leaves
