Microwave Recipe: Hollandaise Sauce

Microwave Recipe: Hollandaise Sauce

This is a super quick and fail free hollandaise sauce recipe. You will need a high sided bowl or jug for this recipe.  You will also need your Smeg hand blender! Set microwave to as close a setting  as your microwave will allow.

METHOD

  1. Mix yolks, mustard, salt and lemon juice in the jug  that came with your hand blender or other microwave safe tall jug or jar that will fit the head of your hand blender.
  2. Put the diced butter into a bowl and cover with paper towel (to catch the spatters) and cook on 750w until bubbling – about 3 minutes depending on how cold your butter is etc 
  3. Carefully pour hot butter onto egg mixture, mix with a fork.
  4. Lower microwave to 360w and cook for about one minute mixing every 20 seconds or so
  5. Using your Smeg hand blender  blitz to bring the sauce together.  
  6. Adjust seasoning, add a little boiling water if sauce is too thick.

1 tsp Djohn mustard 

1 tsp salt 

125gms unsalted butter cubed
