
This dessert looks quite decadant but is exceptionally quick and easy to make with your steam oven. You can swap out the cherries for berries of any kind if you like
METHOD
- Set Oven to Steam 100C to cook for 5 minutes after the oven has come up to temperature
- Toss cherries in sugar and cornflour and place in small bowl and steam 5 minutes.
- Leave in oven
- While cherries are steaming, beat egg whites until stiff
- In a small bowl whisk egg yolks and sugar .
- Stir eggs and chocolate into egg whites, and sift flour over.
- Gently fold all together until just mixed.
- Line a 20-22 cm round metal pie dish with baking paper and fill with chocolate egg mixture spreading gently and evenly.
- Set oven to Steam 100C 6 minutes.
- When cooked, remove from oven and top one half with cherries - use baking paper to carefully fold the other side over the cherries.
- Sprinkle with cocoa powder and or icing sugar or drizzle with more melted chocolate.

1 ½ T caster sugar
50gms dark chocolate, melted
1 t plain flour
