Steam Combi Recipe: Turkish Style Bread Rolls

Turkish style bread is often recognisable by its use of sesame and nigella seeds.  These rolls,  which are a flatter style of bread,  are an easy  and delicious way to give your meal a Mediterranean feel.
With most bread making we recommend using scales rather than cup measurements to ensure a consistent result.  
If you are using instant yeast (the very fine granule type) and you know it is fresh and alive then you can add it directly to the flour mixture as we do in this recipe.

If you arent sure if its alive, place half a teaspoon in 1/2 cup of warm water with 1/2 teaspoon of sugar and wait 10 minutes to see if it starts bubbling. If it doesnt, through that batch of yeast away and buy some more 

 

METHOD

  1. Add flour, yeast, salt and water or whey to a kitchen mixer, and knead for 6-8 minutes, then place in  oiled bowl to rise .
  2. Set oven to  its Dough proving function or use Steam Combi low humidity (in Asko Steam Combi level 1)  35C and place in oven for 45 minutes or until doubled in size.
  3. Remove dough and shape into a wide log approx. 3cm thick on a floured board.
  4. Divide log into 6 rectangular pieces and place on baking paper lined tray.
  5. Place back in oven at same settings for 20 minutes.
  6. Remove from oven and poke a few holes in each roll
  7. Brush liberally with oil and egg yolk mixture.
  8. Sprinkle with nigella and sesame seeds 
  9. Preheat oven on Bottom and Fan Forced or Fan Assisted 230c . 
  10. Place rolls near the bottom of the oven and cook for 10 minutes or until puffed and golden.

Ingredients

375 gms High Grade Flour 
8 gms instant yeast  (very fine granules)
8 gms salt
260 gms water ( or use whey left over from yoghurt or cheese making) 
1T olive oil mixed with 1 egg yolk 
Nigella seeds
Sesame Seeds
