
This recipe does require a steam oven, but you could easily cook this in a frying pan on a low heat if you don’t have one. I chose not to fill my omelette once folded but it would be delicious filled with a mixture of stir-fried vegetables and or meat or fish
METHOD
Line an 8-10 inch pie dish or shallow cake tin ( not loose bottom) with baking paper.
Soak noodles in boiling water until soft then drain.
Beat eggs in large bowl and add all other ingredients.
Pour into lined dish and ensure noodles are evenly distributed.
Set oven to Steam 100C 6 minutes and place dish in oven.
Remove from oven and turn out, and fill if desired. Fold in half and serve with a drizzle of sweet chilli sauce, semame oil and chopped coriander leaves.
3 eggs, beaten
1 cup of rice vermicelli (soaked in boiling water until soft)
1T sesame oil + more for serving1 t soy sauce
1 spring onion finely sliced
1/2 finely chopped red chilli
1 t minced ginger
1 clove of garlic, crushed
2 T finely chopped coriander leaves plus more for serving
Sweet chilli sauce for serving
