Easy Seed Bread

Easy Seed Bread

This is a very easy recipe. No kneading and no rising apart from what happens in the oven - its almost magic. It gives a result very much like a well known commercial wholemeal bread . Using Steam combi means you get a nice even rise without the crust forming on top too early.

METHOD

  1. Mix honey with milk and microwave 750 w for 90 seconds 
  2. Mix in yeast granules . If you are using the very fine granules and you know your yeast is alive and active, there is no need to wait, but if you are using the larger little round granules, wait about 5 minutes for the yeast to activate and bubble up.
  3. In a separate bowl mix flours , salt kibble rye and seeds. 
  4. Using the handle of a wooden spoon mix together to a sticky dough  
  5. Line a  fairly large loaf tin with baking paper and place dough in tin, smoothing top, and then sprinkle with remaining seeds  
  6. Place in cold oven and set the following staged cooking programme 
  7. 45C Steam Combi level 2 60 minutes, then Bottom and Fan Forced 200 c 30 minutes  
  8. Remove from oven and remove from tin to cool completely before slicing

Ingredients

2 c milk  

1 T honey 

1 T instant yeast  

225g high grade flour 

150g wholemeal flour 

75 g rye flour 

1 tspn salt 

3 T kibbled rye 

3/4 c mixed seeds of your choice such as sunflower, pumpkin, poppy, sesame, chia, linseed 

2 T more seeds to sprinkle on top
