Here is another collaboration recipe with our friends at Imagination Gin, this time using their Wakame Seaweed Gin which is a perfect pairing for both drinking alongside, and marinating some delicious oysters in the shell.
METHOD
- In a jug, mix gin, mirin, sesame oil chopped ginger and chilli and spring onions and stir together.
- Drizzle over oysters in the shell
- Serve and enjoy directly from the shell

1 dozen large oysters in the shell
3T Imagination New Zealand Wakame Seaweed Dry Gin
3T mirin
2T sesame oil
2-3 T pickled pink ginger (Gari), finely sliced
1 red chilli , seeds removed, finely diced
1/2 Spring onion, Green part, finely sliced
