Steam Combi Recipe: Indian Spiced Potatoes

This is a very simple and exceptionally delicious recipe that makes a great side dish or even on its own as a snack.

If you dont own a steam combination oven, boil the potatoes for 8-10 minutes then toss in the seasoning and roast.

METHOD

  1. Mix all ingredients except potatoes in a large bowl or small roasting dish and toss chopped potatoes, making sure they are all coated all over.
  2. Set oven to Steam 100C 20 minutes and steam potatoes.
  3. Then set oven to your favourite roasting function (Circo Roasting/Hot Air Grilling/Turbo) depending on your oven 220C and roast for 20 further minutes, or until potatoes are tender and well browned. 
  4. Toss a couple of times during the cooking process. 
  5. If desired serve with chopped fresh coriander leaves  and or thyme.

Ingredients

500g roasting potatoes such as Agria or Vivaldi, chopped into 4cm chunks , peeled or unpeeled both work well.
3 T olive oil 
2T lemon juice 
2 tspn runny honey 
1-2 T cumin seeds 
2t tumeric 
1 t smoked paprika 
1 T black mustard seeds 
1 t garam masala 
salt 
Pepper
