Microwave Combi Recipe: Root Vegetable Bake

This easy dish is a great side dish to go with a casserole or roast meat and is an excellent way to achieve your 5+ a day.
Use a variety of coloured vegetables to create a really attractive dish.  This can be cooked without microwave but you will need to double the cooking time.

METHOD

  1. Using a mandolin, slice vegetables in thin slices approximately 1mm thick .
  2. Add small amount  of the cream and grated parmesan salt and pepper to a bowl and toss each vegetable individually in the mixture , then arrange in "stripes across the microwave safe baking dish.
  3. Repeat with other vegetables until all the first measure of cream and parmesan is used up. If using beetroot, leave this till last to avoid staining the other vegetables pink.
  4. Add the second measure of parmesan and cream to a small bowl, mix and drizzle over the arranged vegetables. 
  5. Preheat oven to 220C 
  6. Set oven to Fan assisted Grill+ microwave 220C 360W ( or as close as able with your oven settings)
  7. Place dish in the middle of the oven and cook for 25 minutes or until vegetables are browned and crispy on the top and  and tender underneath

Ingredients

A variety of root vegetables such as:

2 Parsnips

2 small or one large red kumara

2 small or one large orange kumara

2 small beetroot

(Use other vegetables if available, such as carrot, swede, potato )

1/3 cup cream + 1/4 cup more

1/2 cup grated parmesan + 1/4 cup more 

Salt and pepper
