Spiced Star Christmas Cookies

These make a great addition to a Home made Christmas gift bag.

METHOD

  1. Place the butter and sugar in the bowl of an electric mixer and beat for 5 minutes, until pale and creamy.  Scraping down the sides of the bowl  
    to ensure even mixing. 
  2. Add the molasses, vanilla, baking soda, together  
  3. Add ginger, mixed spice and flour 
  4. Beat until the mixture just comes together to form a smooth dough.  
  5. Roll out the dough between 2 pieces of non-stick baking paper to 3mm thick. 
  6. Use cookie cutters to cut into desired shape, re rolling excess dough as required. 
  7. Refrigerate for 20 - 30mins to firm up the dough  before cooking 
  8. Preheat oven to 160°C. Fan Forced 
  9. Bake for10-12 minutes or until the cookies are just firm to the touch.  
  10. Transfer to a wire rack to cool completely. 
  11. Ice and decorate as desired
    Makes approx. 30 cookies. 
    Store cookies in airtight container

125g Salted butter, cubed & softened  
90 g / ½ c  brown sugar 
250g / â…” c Molasses 
1 tsp Vanilla extract 
1 tsp  Baking soda, sifted 
2 tsp Ground Ginger   
2 tsp Mixed Spice
375g / 2½ c All purpose flour,   sifted 

Icing sugar to Dust when cooled or decorations and icing as desired
