Summer Fruit Cobbler

Introducing our mouthwatering fruit cobbler recipe - a delightful dessert perfect for utilizing excess summer fruit, whether raw or cooked, and easily prepared using your Smeg processor; simply assemble the dry ingredients, pulse with butter, vanilla, yolk, and milk until sticky and thick, then dollop over fruit and bake for 40 minutes until bubbling and golden - serve with cream or vanilla ice cream for an irresistible summer indulgence!

Serves 4 

METHOD

  1. Pre heati oven to 180c  hot air and 50% steam 
  2. Place prepared fruit in oven proof dish 
  3. Assemble your Smeg processor and add all the dry ingredients.  
  4. Pulse to combine dry ingredients
  5. Add butter and pulse until coarse crumbs appear.
  6.  Add vanilla, yolk and milk, pulse till just combined, mix will be sticky and thick. 
  7. Place dollops of mixture on top of fruit,
  8. Place in  pre heated oven and bake for 40mins until pudding is bubbling and cooked through. 
  9. Leave to rest for 15 minutes or cool to room temperature, serve with cream and or vanilla ice cream.

3 cups of fruit 

1 cup plain flour 

2 tsp baking powder 

1/3 cup castor sugar 

80 gm butter 

1 tsp vanilla extract or paste 

1 egg yolk 

1/3 cup buttermilk, milk or yoghurt
