
These tasty morsels are great as a party food or afternoon snack . The instructions are given for using the wonderful Smeg Omnichef oven, but if you arent lucky enough to own one, you can cook the meat mixture on the stove.
METHOD
- Mix meat, spice mix and chilli beans together and spread over glass oven tray
- Set oven to 220C 50% steam and 200W and cook for 15 minutes or until meat is just cooked. ( it will be cooked further later so it doesnt pay to overcook)
- While the meat is cooking cut burritos into circles big enough to line greased muffin tins
- Fill burrito lined cups with meat mixture to 3/4 full ( this mixture should make approximately 18)
- Preheat oven to 220C Turbo, and place rack on bottom shelf of the oven
- Top with a dollop of salsa and grated cheese and cook for15- 20 minutes or until cheese is melted and burritos are browning and cooked on the base
- Remove from tins and top with another dollop of salsa, guacamole and or sour cream as desired and sprinkle with chives, coriander or spring onions
- Serve Immediately.
500g Premium grade minced beef
sachet (35g) taco seasoning
1 can chilli beans, Mild, Medium, Hot - your choice
1 pack of burrito wrappers or other wrap of your choice
1 jar salsa of your choice
1.5 c grated tasty cheese
Guacamole or Sour cream
coriander, chives or spring onions finely chopped- optional
